トマト麻婆豆腐

【材料】

  • おぼろ豆腐 300g
  • トマト 大1個
  • カットトマト缶 1/2缶
  • 合挽き肉 120g
  • 玉ねぎ 1個
  • ニンニク
  • 生姜
  •  豆板醤 適量
  • ケチャップ 適量
  • オイスターソース 適量
  • 酒 適量
  • みりん 適量
  • 砂糖 適量
  • 醤油 適量
  • 鶏がらスープの素 適量
  • ごま油 適量
  • 片栗粉 適量
  • ラー油 適量

 

誰もが考えるトマト入り麻婆豆腐。

以前イタリアントマト缶を使ってみたのですが豆板醤との相性がイマイチ。

生トマト+カットトマト缶+ケチャップと目一杯トマトにしてみたらいい感じ。

トマトの爽やかさがキモですね。

それとちょっと甘い味付けも。

トマトと絹ごし豆腐もしっくりこないのでおぼろ豆腐を試してみた。

おぼろ豆腐は塩を入れた熱湯で下茹でする。

トマトは賽の目に、玉ねぎとニンニクと生姜はみじん切りにする。

ごま油でニンニクと生姜を炒め香りが出たら玉ねぎとひき肉を投入。

酒を入れアルコールを飛ばし、刻んだトマトとトマト缶、おぼろ豆腐を入れる。

豆板醤、みりん、オイスターソース、ケチャップ、醤油、鶏がらスープの素を入れて煮込む。

水溶き片栗粉を回し入れ、ラー油で辛味を調整。

いい意味で予想を裏切る味。

75点。
